Revani Recipe (Authentic Turkish Semolina Cake)

If you’re looking for a classic Revani recipe, this traditional Turkish semolina cake is light, fluffy, and soaked in fragrant lemon syrup. Popular across Türkiye and often served after meals or during celebrations, Revani is simple to prepare and incredibly satisfying.

Ingredients
For the Cake:
3 large eggs
1 cup granulated sugar
1 cup plain yogurt
1 cup vegetable oil
1 cup fine semolina
1 cup plain flour
1 tsp vanilla extract
Zest of 1 lemon
1 tbsp baking powder

For the Syrup:
2 cups granulated sugar
2 cups water
Juice of ½ lemon

Instructions
Step 1: Prepare the Syrup
Add sugar and water to a saucepan.
Bring to a boil and simmer for 10 minutes.
Add lemon juice and simmer for 2 more minutes.
Remove from heat and allow to cool completely.
Note: The syrup must be cool before pouring over the hot cake.

Step 2: Make the Revani Cake
Preheat oven to 180°C (350°F).
Grease a medium baking dish.
Beat eggs and sugar until pale and fluffy.
Add yogurt and oil, mixing well.
Stir in semolina, flour, baking powder, vanilla, and lemon zest.
Pour mixture into the baking dish and smooth the top.
Bake for 30–35 minutes until golden brown.

Step 3: Add the Syrup
Remove cake from oven.
Slice into squares or diamonds while hot.
Slowly pour cooled syrup evenly over the hot cake.
Let rest for at least 1–2 hours to fully absorb.

Serving Suggestions
Sprinkle with desiccated coconut
Garnish with crushed pistachios
Serve with Turkish tea or coffee
Add a spoon of kaymak or ice cream for extra indulgence

Tips for the Perfect Revani Recipe
Use fine semolina for a soft texture.
Ensure syrup is cool and cake is hot (or vice versa) for proper absorption.
Let it rest fully before serving — this improves flavour and texture.
Store covered at room temperature for up to 3 days.

Why This Revani Recipe Works
This traditional Revani recipe balances moist texture with a light citrus syrup. The yogurt keeps the cake tender, while semolina gives it its signature structure.
