      Gözleme (Turkish Flatbread)

      Dough
      Ingredients
      2½ cups all-purpose flour
      1 tsp salt
      1 tbsp olive oil
      ~¾–1 cup warm water (add gradually)

      Instructions
      Mix flour and salt in a bowl.
      Add olive oil, then slowly add warm water while mixing.
      Knead until you get a soft, smooth, non-sticky dough (about 5–7 minutes).
      Cover and let rest 30 minutes (important—makes rolling easy).

      Filling (Classic Spinach & Cheese)
      Ingredients
      200 g spinach, finely chopped
      150–200 g white cheese (Turkish beyaz peynir or feta), crumbled
      1 small onion, very finely chopped (optional but great)
      Black pepper
      Salt (go easy—cheese is salty)
      Mix everything together in a bowl. No cooking needed.

      Shaping and Cooking
      Divide dough into 6–8 balls.
      Roll each ball very thin (almost transparent) on a lightly floured surface.
      Spread filling on half of the dough, leaving edges clear.
      Fold over to make a half-moon (or square), press edges gently.
      Cook on a dry, hot pan (no oil) over medium heat:
      ◦ 2–3 minutes per side
      ◦ Flip until brown spots appear and dough is cooked
      Brush lightly with butter or olive oil right after cooking.

      Serve With
      Ayran (salted yogurt drink)
      Fresh lemon wedges
      Turkish tea

      Minced beef + onion + spices (lightly pre-cook meat)
